Spitfire Chicken with Cheddar Mashed Potatoes

Spitfire Chicken
2 tsp lime juice
salt & pepper
4 chicken breasts
1 pkg/lb of bacon cooked and crumbled/chopped
3 or 4 small jalapeno peppers sliced into rings or into long thin strips
2 large onions sliced into thin rings
1 bottle Heinz Carolina Mustard Style BBQ sauce or something similar
 
Directions:
1. make bacon according to package directions
2. while cooking bacon, sprinkle lime juice over chicken breasts and use hands to coat then salt and pepper both sides grill chicken about 4-7 min per side depending on grill temperature (until no longer pink)
3. halfway through cooking chicken (when you are ready to flip) place sliced onions and jalapenos on grill- grill until crisp tender. you may also sauté the vegetables.
4. Assemble - place chicken on plate top with jalapeno peppers and onions, sprinkle on chopped bacon, drizzle sauce over it.
 
Cheddar Mash:
4-8 red potatoes (depending on size)
4-8 Tbsp butter
1-2 c cheddar or marble jack cheese
milk/heavy whipping cream
salt/pepper
 
Directions:
1. peel (or can leave skins on), chop, boil, strain and roughly mash potatoes.
2. Add at least 1 Tbsp butter per potato. Add salt to taste. Add milk or cream and blend or mash- as you do this add cheddar or Marble Jack cheese until you reach desired consistency and potatoes turn slightly orange.
3. sprinkle fresh ground black pepper/salt and more cheese over top to decorate
