Sweet 'n' Sour Stir fry
 
 
4 boneless skinless chicken breasts cut up and fried
2 cups cooked rice (just follow your package instructions)
meanwhile cut up
1 red pepper
1 cup sugar snap peas
1 cup carrots
1-1lb 4oz can pinapple rings or chunks
mix vegetables and steam in microwave ten minutes
 
Sauce
pour reserved pineapple juice in a 2 cup measuring cup, add water to the juice until it reaches the 1 and 1/4 c line. pour in saucepan. add 1 cup sugar, 2tbsp cornstarch, 3/4 cup apple cider vinegar, 1 tbsp soy sauce, 1/4tsp ground ginger, 1 chicken boullion cube. bring to boil, boil 2 min. then simmer to keep warm.
divide rice into portions on plates or in bowls. add portions of vegetables and chicken on bed of rice. pour desired amount of sauce over.
