Pheasant under Glass

Lineman special
pheasant breast pieces
1 jar jalapenos
2 green peppers
1 onion
mushrooms
let bird marinate in jalapeno juice or teriyaki for 20 min skewer all together grill 2 min on each side or until done and enjoy.

Fleck Pheasants
4 pheasant breasts
8 strips bacon (2 per breast)
1 pkg of your favorite dried smoked beef (jerky)
1 cup sour cream
1/2 c Swiss cheese or a slice or two for each breast
1 cup cream of chicken soup
Place beef on bottom of pan. wrap bacon around breasts and place on top. mix sour cream with soup spoon over chicken. bake uncovered for 2 hours at 300 degrees place cheese on top and melt. serve with rice.

Roasted Pheasant
Pheasant quartered
2 carrots sliced
5 baby red potatoes quartered
1/2 onion cut into chunks
salt and pepper
2 pinches thyme
1/2 c chicken broth
place all in pan and roast at 350 degrees until done (can range from one hour to two just keep checking to see if pheasant is cooked and vegetables are tender)

Pheasant and wild rice casserole
1 pheasant cut up or four breasts
1 box wild long grain rice
1 pkg dry onion soup mix
1 small onion chopped
2 stalks celery diced
1 can mushrooms
1 can chicken broth

bake at 350 for an hour and half pour 1 can celery soup over top of casserole heat and serve

Grape Pheasant
1 whole pheasant
1tsp salt
1/4 tsp white pepper
1/2lb grapes
2 Tbsps butter
1 cup bouillon or water
rub bird with salt and pepper inside and out. fill with grapes and skewer or sew the opening. melt butter in roaster and put the bird in breast side up. roast at 400 degrees for 50 min. basting with pan drippings and the bouillon or water u put in pan. serve and garnish plate with more fresh grapes.
